The prices they pay are not reflected in the Merchant Notebook. Rich people don't care as much about prices and will buy items for higher than their perfect price.

If you fail to catch them in time, they will leave with the items. It is possible for the same thief to return multiple times on the same day, however. These special tables are only received with the Shop Level 2 and Shop Level 3 upgrades. The price can be determined per table, so identical items can be sold for different prices.
